Wrap a dish before it is ordered and it needs a full ingredients list with every allergen emphasised. Serve the identical dish at a counter and it needs none, though the information still has to be right. One dish, two rules, decided by the packing.
Allergens get settled before a menu is confirmed, because how a dish is packed decides what the law requires.

TERRA BRASILIS LTD was incorporated in England and Wales on 9 November 2020 under company number 13005621, with its registered office at 2 Littlers Close in London. We serve Brazilian food three ways: as a takeaway, from mobile stands and as an event caterer, and the company has had the same director since the day it was formed.
The rule that decides most of how this kitchen runs is one almost no customer has heard of, and it is not about ingredients. Food that we box or wrap on our own premises before a customer orders it counts as prepacked for direct sale, and it has to carry the name of the dish and a full list of ingredients with each of the fourteen regulated allergens emphasised in that list. The same dish, plated at a counter or served at your event, is not prepacked and needs no label at all, though the allergen information still has to be available, accurate and signposted so people know to ask. One dish, two entirely different obligations, decided by the moment it went into a box. Brazilian cooking makes it concrete. Pão de queijo contains milk, and because it is made from cassava starch it is usually gluten free, which catches people out both ways round. Coxinha contains wheat and generally milk. Paçoca is built on peanuts. So we will tell you exactly what is in a dish, and where a kitchen handling nuts, milk, wheat and sesame cannot promise the absence of traces, we say that instead of offering an assurance we are not in a position to give.
Because the label depends on when it was packed, not what is in it. If we box or wrap it on our premises before you order it, it is prepacked for direct sale and must carry the dish name and a full ingredients list with the fourteen allergens emphasised. If it is plated or boxed after you order, it is not prepacked and needs no label. The information still has to be accurate and available either way, which is the part that actually protects you.
We will tell you precisely what is in any dish, and we will tell you honestly where we cannot guarantee the absence of traces. This kitchen handles nuts, milk, wheat and sesame, so for most dishes a guarantee of no cross contact would not be true, and an assurance that is not true is worse than no assurance at all. If your allergy is severe, tell us at booking and we will talk through what is genuinely safe rather than reaching for may contain.
Usually yes, because it is made with cassava starch rather than wheat flour, but it definitely contains milk and cheese. That combination surprises people in both directions, which is a good illustration of why guessing from the look of a dish does not work. Ask us about any dish on the menu and you will get the actual ingredients rather than a reassuring summary.
In England displaying the rating is voluntary, unlike in Wales and Northern Ireland where it is mandatory, so you will see plenty of English businesses without a sticker and that by itself tells you nothing. Our rating and the date of the inspection behind it are stated on the site, and we will not claim a rating we have not actually been awarded.
The date, the numbers, the venue and its access and kitchen facilities, the service time, and crucially any allergies among your guests, at booking rather than on the day. We then build the menu, quote per head in writing, and produce an allergen sheet covering every dish that comes with the food and with whoever is serving it.
More than fourteen days before the event, the deposit comes back in full. Between fourteen and seven days we keep half of it against food and staff already committed. Inside seven days the deposit is retained, and inside forty-eight hours the full quoted amount is payable, because by then the shopping is done and the shift is booked. If we cancel for any reason that is not outside our control, you get everything back.
